One-Pan Marry Me Chicken with Sun-Dried Tomatoes on Stella Platter in Crimson

One-Pan Marry Me Chicken with Sun-Dried Tomatoes

Written by: Eliza Roth

|

A creamy sun-dried tomato sauce that makes this Marry Me Chicken one of the most popular chicken dinners around, and it all happens in just one skillet.

By now, you've probably heard of the social-media-viral dish called Marry Me Chicken. The story (supposedly) goes that if you make it for your partner, they'll fall in love with your cooking and propose on the spot. Although I'm certainly not married yet, I've made this dish more times than I can count. Even my pickiest friends eat it, and a few have even asked for the recipe before they finished their plate.

It's all one pan. Sear the chicken, build the sauce in the same skillet, and let it finish together. Most of it is made of pantry staples: garlic, chicken broth, parmesan, a jar of sun-dried tomatoes. This Marry Me Chicken is perfect served over pasta or with a side of crusty bread.

Thin cutlets, golden edges, sauce in every bite.

One skillet, so cleanup is easy.

Fancy enough for company, easy enough for a Tuesday.

Pan-Seared Chicken Cutlets with Sun-Dried Tomatoes, Garlic and Parmesan Cream

Ingredients:

For the chicken:

  • 4 boneless, skinless chicken breasts, sliced in half to make thin cutlets
  • 1/4 cup flour
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • salt & pepper
  • 2 tbsp olive oil

For the sauce:

  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped, plus a spoonful of the oil from the jar
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan
  • 1/2 tsp red pepper flakes
  • a handful of fresh basil, chopped into ribbons

Method:

  1. Pat the chicken dry. Mix the flour, herbs, salt and pepper in a shallow dish, then dredge each cutlet, lightly.
  2. Heat the olive oil in a large skillet over medium-high. Sear the chicken 4 to 5 minutes per side, until golden and the internal temperature hits 165°F. Move it to a plate and set aside.
  3. Turn the heat down to medium. Add the garlic to the same pan and stir for about a minute, scraping up the browned bits.
  4. Pour in the broth and let it bubble for a few minutes. Stir in the cream, sun-dried tomatoes, parmesan and red pepper flakes. Simmer until it coats the back of a spoon.
  5. Nestle the chicken back in and spoon the sauce over the top. Finish with basil. If you're looking to make it a full meal, serve over pasta. I served our delicious Marry Me Chicken on our Stella Crimson Scalloped Platter to catch all that extra saucy goodness.

If you've never made Marry Me Chicken before, this is the version to start with. It couldn't be less complicated, it doesn't ask for anything unusual, and it comes together in one pan. Whether you're cooking for someone you're trying to impress or just want a good reason to eat garlic bread, this dish earns its name.

PS. Made it to the bottom? Stick around. We’ve got more recipes in the works and some NEW BAKEWARE you’re going to want in your kitchen soon ;)
