Mixing up Mojitos with a Blackberry Twist

Mojitos are a wonderful combination of lime and mint, but when enlivened with blackberries they take on a whole new character. Here they offer a tart, refreshing cocktail that screams summer (or "summah" if you're from New England).

When they're in season, grab yourself a handful of blackberries and mix up a few of these tangy lovelies.

Blackberry Mojitos

Ingredients

Mint Simple Syrup (optional- plain simple syrup or a teaspoon of sugar works here too):

  • 1/2 cup sugar
  • 1/4 cup fresh mint leaves

Cocktail:

  • 2 ounces white rum
  • 2 ounces club soda
  • 1/2 oz fresh lime juice
  • 6-7 fresh mint leaves
  • 3-4 blackberries
  • 3/4 oz. of minted or plain simple syrup
  • Cup of ice

 

Preparation

  • For the mint syrup: Combine the sugar and 1/2 cup water in a small saucepan and bring to a boil. Cook until the sugar has dissolved. Stir in the mint and let steep 30 minutes. Once cooled, strain the mint leaves.
  • For the cocktail: In a tall mixing glass combine the blackberries and mint leaves and muddle with the back of a spoon or a muddler, then add the simple syrup and lime juice stirring to combine. Add the rum and a half a dozen ice cubes and stir vigorously for 5 seconds. Rub a lime slice around the rim of a tall glass and fill with ice. Pour the cocktail through a strainer (or hold back the solids with the back of a spoon) and pour into the glass over the ice. Add the club soda and stir. Garnish with lime or a  mint sprig and enjoy!
